GREETING

Founded in the early 1900s in Nishio, Japan’s leading matcha-producing region, Nanzan-en operates a vertically integrated system from tea cultivation to finished products. We are one of the few matcha manufacturers in Japan with our own private tea farms. While meeting international food safety standards, including FSSC 22000 certification, we continue to use traditional stone mills to produce high-quality matcha. By combining tradition with modern technology, we support product development, promote human health, and preserve the culture of matcha.

ABOUT MATCHA

Matcha (powdered green tea) is a kind of green tea that is ground to fine powder and it is popular as tea for Japanese tea ceremony. Matcha contains rich of umami taste, elegant aroma and brilliant green color. It is ideal for flavoring sweets and foods at restaurants,café or home, and it combines particularly well with ice creams, chocolates, baked sweets and dairy drinks.
When you drink Matcha you ingest the whole leaf and receive all of the nutrition of the leaf.

VERTICAL INTEGRATED
MANUFACTURING SYSTEM

Nanzan-en is Matcha manufacturer own its private tea farms and operating “Vertical integrated manufacturing system”, covering from cultivating tea trees to processing Matcha products.
We let our tea farm staffs and contracted farmers keep cultivation records and we also maintain production records. With these records, we have established traceability system which is able to trace back from lot code of the products and reach to cultivation records.

Our factory has hygienic food manufacturing facilities and has received FSSC22000 (Food Safety System Certification). We have installed couple of optical sorters for removing foreign materials from raw materials. Nanzan-en’s Matcha products are sanitary, clean and safe. We have received Halal certification as well. Our Matcha is suitable for muslim people too.

Since tea treesare provided by nature, Nanzan-en isblessed with mother nature.
For returning the compliment to nature, we have placed maximum 40kw wind power generator in our factory site. We are using clean electricity generated by wind for manufacturing Matcha products.In addition, we are recycling garbage from the tea as fertilizer used for tea trees growing to reduce the waste. Nanzan-en provides Eco-Friendly Matcha.

THE BACKGROUND OF
MATCHA PRODUCTION AREA, NISHIO

Modern stone mills

About 700 years ago, tea plants were provided to Nishio area located in Aichi pref. This area is warm, fertile, and well drained land.
Yahagi-river is flowing in this area and river fog has a positive impact on tea quality rises. This blessed land is suitable for the cultivation of better quality tea trees. Also, Okazaki, next to Nishio area, is famous for the production of high grade stones as raw materials stone mills for Matcha production. A combination of blessed land and stone mills established top level Matcha industry in this area.

MATCHA PRODUCTION FLOW

Cultivating

Nanzan-en’s Mathca production process is started with boosting the fertility of the soil. We are using our proprietary organic fertilizer for tea trees, and keep them under best condition.
Around April to May, tea farms are covered with sun shade to avoid sunlight. It causes characteristic flavor, less of bitterness, rich of umami and brilliant green color of Matcha.

Picking, Steaming and Drying

In Nishio area, tea leaves picking is started in early May.
After picking, freshly- picked tea leaves are steamed to prevent oxidization and keep them green color. Steaming process is one of the most important quality control points of the tea products. Then, tea leaves are being dried in the tunnel furnace. After drying, the end product is Aracha (crude tea) of Tencha (raw material of Matcha).

Sorting

Aracha still contains stems, veins and poor quality leaves. In sorting process, they are removed and Aracha is turned to Shiagecha(refined tea) of Tencha.

Stone milling

Tencha is ground to fine powder, Matcha by stone mill. The particle size is very fine, around 4 micrometer. Stone milled Matcha is best in taste, flavor and color.
